Eileen was a long-time member of Our Savior's Lutheran Church, served as President of the Ladies' Aid, and participated in the social circle. She also enjoyed and excelled at many activities including dancing, baking, gardening, growing beautiful flowers, raising Norwegian Elkhound dogs, taking care of her grandchildren (Katie and John), and attending social events with Russ such as fiddling contests and dances at Germania Hall.

Eileen's special time of year was Christmas, when her family would be together and she would bake many pies and cookies. Each year Eileen made her famous homemade lutefisk and lefsa dinners with meatballs and mashed potatoes, which everyone (especially Russ) always looked forward to.
